Garden salad with yogurt

Ingredients
  • 1 cups Greek yogurt 
  • 1 large potatoes boiled 
  • 3 tomatoes 
  • 1 cucumber (sliced)
  • ½ lettuce 
  • 2 hard boiled eggs
  • ½ cup olive oil 
  • 1 tsp mustard 
  • salt to taste 
  • capers if desired
Serves 4-6

Preparation​​​​​​​

  1. Cut potatoes and tomatoes in a salad bowl, add cucumber. Chop the lettuce, cut eggs in quarters. Lightly toss.
  2. In small mixing bowl, mix yogurt with mustard, olive oil, salt and pour over the salad.
  3. Mix and serve.
