Chocolate Chip Fruit Cake

Ingredients
  • 200 gr brown sugar
  • 100 ml Extra Virgin Olive Oil
  • 100 gr Greek yogurt
  • 3 large eggs
  • vanilla extract
  • 225 gr flour
  • 1 tsp baking powder
  • 100 gr chocolate chips
  • 100 gr cranberries
  • oat flakes

Cooking time: 50 min


Preparation

  1. Preheat oven to 180°C. Oil pan and line with oat flakes. 
  2. In a bowl mix flour and baking powder.
  3. In another bowl beat the eggs, slowly adding the sugar and mix in the yogurt, vanilla extract and Extra Virgin Olive Oil. 
  4. Add flour mixture, fold in the chocolate chips and cranberries. 
  5. Bake for 50 min until toothpick comes out clean.
