They are prepared with fleur de sel, a rare salt harvested in the salt mines of Messolonghi (Western Greece). Fleur de sel is produced by a process that is considerably more intricate than any other kind of salt and it is skimmed off by hand. This process produces grains of different size, a smoother texture and an intense taste, which perfectly finishes the pistachio savour.
