Origin: Messolonghi

Messolonghi is in the west continental part of Greece. It is a large lagoon now a national park, one of the most important for biodiversity in the Mediterranean area. The area is also home to a vast salt mine producing quality salt.

When the water evaporates from the surface of the λακούβες – the natural salt pans by the sea – a thin crust is first formed on the surface, and dries with sun and wind. This is Fleur the Sel. It is collected by hand, using an ancient technique. 
It contains a significant amount of minerals and it is naturally iodized, unlike common salt which only contains sodium chloride and is chemically iodized. Fleur de Sel is important for its nutritional value, recommended for hypertension and for the correct balance of vital substances.
Fleur the Sel is more than salt. Its components make it tasty, entice our taste buds and enhance the flavour. Moreover, it is appreciated from the first sprinkle for its crunchy texture just before it melts in your mouth.
